Recogida seleccionada de las uvas. Tras la fermentación a temperatura controlada (15-18ºC) del mosto flor, se procede a su conservación a baja temperatura, lo que le permite mantener una cantidad pequeña y natural de anhídrido carbónico. Pocos meses después de la vendimia, antes de que finalice el año, se procede a su embotellado.
El reto de la Pinot Gris en Montalcino: un vino en el que la fragancia típica de la cepa se enriquece con más estructura gracias al extraordinario microclima de Montalcino.
