Die ganze Traube wird vor der Kelterung-Abbeerung bei 8-10° gekühlt. Wenn der Mostkahm gekeltert/abgebeert ist, wird er getrennt und 48 Stunden für die kalte Sedimentation geklärt. Dann wird nur die Klärung in Barriques umgefüllt und mit den Gärstoffen für die alkoholische Gärung versetzt. Nach der Fermentierung wird die Temperatur der Räume auf 10° gesenkt, um den Beginn der malolaktischen Gärung zu verhindern. Es folgt ein Zeitraum der Veredelung auf den Gärstoffen für 5-6 Monate, diese werden einmal wöchentlich aufgeschlagen. Der Zyklus schließt mit einer Veredelung in der Flasche von 8-10 Monaten ab.
Gehört zur Produktreihe der Monosorten Castello Banfi, ein Chardonnay in seiner ganzen Reinheit, der sich mit großartiger Textur und großen Gerüchen ausdrückt, dank des Mikroklimas unserer eher nördlich gelegenen Weinberge in Montalcino und dank der Alterung in französischen Barriques.

An extremely intense wine, accompanied by floral scents and fruity notes of pear, citrus and a light hint of toasted hazelnut. In the mouth it has a considerable and silky structure, well supported by an excellent acidity that gives freshness and persistence at the same time.
The whole grape bunches are chilled to 8-10°C prior pressing and destemming. The free-run juice is then separated and clarified over 48 hours by cold sedimentation, and only the clear must is racked into barriques and inoculated with yeasts for the alcoholic fermentation.
After the fermentation, the roomtemperature is lowered to 10°C to avoid the beginning of malolactic fermentation. An aging period on the fine lees follows during 5-6 months with a weekly stirring of the lees. An 8-10-month bottle aging concludes the cycle.
Straw yellow color. The perfumes are fresh, with sweet, floral and fruity notes of pear, melon, peach and citrus. In the mouth it has a considerable size well supported by an excellent acidity. The wine is very well balanced with a long finish.
