Predominio de la sangiovese.

Método de producción

El 70 % de la uva, recogida a mediados de septiembre, fermenta durante 2-3 semanas en barricas de acero a una temperatura de entre 18 y 28 °C. El restante 30 % se deja secar en la planta hasta finales de otoño, momento en el que se recoge y se añade al vino de la primera vendimia. A partir de ese momento, se inicia una segunda fermentación, con una duración de 3/4 semanas, a la que, solo para el 20 %, le sigue una breve permanencia en barricas de tercer paso.

ElGoverno all’uso Toscanode Banfi, pretende convertirse en una nueva forma de interpretar el vino. Una técnica antigua que da vida a un vino dinámico, fresco y de estilo inconfundible.

    The 70% of the grapes, harvested by the second half of September, is fermented for 2-3 weeks in stainless steel tanks at 18 – 28 C° temperature. The remaining 30%, drying on the vine until the second half of October, is added to the fist harvest wine, in order to let the second fermentation start and continue for four weeks. The 20% of the resulting wine is aged in 10 years old barriques.

  • The moderate spring rainfall filled aquifers, creating a water reserve for the hot summer months. A very warm July, which favored the premises for an optimal ripening, was followed by an August that was equally hot, but with excellent day and night time temperature excursions. This enhanced the quality of the grapes, both the fragrances of the whites as well as the synthesis of the polyphenols of the reds. A September of rare beauty, sunny and dry with warm temperatures allowed us to complete the ripening and the harvest in optimum conditions.
TASTING

This wine is characterized by a very intense ruby red color and by an extremely pleasant fruity perfume with Marasca cherry, mixed berries jam scents and intense flower notes. The structure is gentle and pleasant, tannins are balanced and well integrated. The acidity to the mouth makes this wine fresh and easy-to-drink. The finish is savory and characterized by a unique fruity persistency. It gives its best at 16C°.
