Traditional varieties of Chianti Classico with an absolute predominance of Sangiovese.

Method of production

The alcoholic fermentation takes place with traditional maceration on the skins for 7 days, followed by malolactic fermentation. An aging of approximately 12-14 months in French oak casks then follows. The proper evolution of Fonte alla Selva Gran Selezione is completed with a bottle aging of at least 4 months.

The winemaker comment

Only a selection of the grapes, carefully harvested in the Fonte alla Selva vineyards, craft this prestigious Gran Selezione. A new wine at the summit of the quality pyramid of the Chianti Classico designation, presented on the market only after a minimum 30-month maturation and a mandatory period in the bottle. A patient aging that enriches its complex aromatic profile and its pleasingly smooth body. This wine shows a great aging potential.

    Fermentation happens in temperature-controlled stainless steel tanks at 25-30°C for 7 days. Malolactic fermentation follows. The barrel aging took 12-14 months long in Slavonian Oak Casks, followed by 4 months bottle aging one.

  • Seasonal Outcome The growing cycle began with a significant delay, with some rains during the Spring. June was marked by cooler temperatures, under the seasonal average. August and September were hot and dry, but the ripening, despite two weeks delay, have been supported by water reserves of the previous months. Summer nights were characterized by cooler temperatures, contributing to the improvement of the quality of the grapes. From the end of September, rainfall was abundant, causing problems during the repining, without affecting the vineyards.
TASTING

The color is mauve red intense. The aromas are characterized by complex and fruity scents of plum jam and blueberry, alongside spices and leather notes. The structure is large with soft tannins. The perfumes in the mouth are persistent. This is a wine that shows a great aging potential by its nature.
