生产技术简介

经过挤压-去梗加工的葡萄将冷藏在8-10℃的温度条件下。葡萄汁将进行为时48小时,包括分离和澄清在内的沉淀加工。
至此,清澈的葡萄汁将倾倒至放有酵母的橡木桶和木桶中,

完成酒精发酵。 发酵后,将温度降低至10℃,避免乳酸发酵。 随后在酒糟中和藤条一起精酿5-6个月。 最后在酒瓶中完成的精酿过程

  • 季節性成果 The mild winter sped up the beginning of the growing season by about 10 days, but this was then slowed down by the abundant spring rains, bringing back to the normality. By the second week of June, and throughout the month of July, there was a gradual and beneficial rise in temperatures. It followed an August with a significant temperature ranges and lack of rain, the best condition for the perfect ripening of the grapes. The harvest began with a slight delay compared with the most recent years, mainly due to the rainy spring, which offset the initial vegetative anticipation. The month of September was very sunny and marked by the absence of rain, which arrived at the end of the month, slowing the harvest of red grapes.
品鉴

The color is pale yellow. The perfume complex, with sweet scents and fruity notes of pear and apricot. In the mouth the structure is well supported by an excellent acidity that gives a great balance to the wine.

  • 季節性成果 The sufficient spring rainfall avoided any water stress during the hot summer months. The quite hot temperatures in July and August, together with a quite wide-range difference in temperature between night and day, favored the grapes maturation. This way, the white grapes could develop an excellent aromatic profile, while the reds could achieve a very good synthesis of polyphenols. September was sunny and dry, with warm temperatures that let complete the ripening of the grapes and yielded for most favorable conditions during the harvest.

An extremely intense wine, accompanied by floral scents and fruity notes of pear, citrus and a light hint of toasted hazelnut. In the mouth it has a considerable and silky structure, well supported by an excellent acidity that gives freshness and persistence at the same time.

    The whole grape bunches are chilled to 8-10°C prior pressing and destemming. The free-run juice is then separated and clarified over 48 hours by cold sedimentation, and only the clear must is racked into barriques and inoculated with yeasts for the alcoholic fermentation.

    After the fermentation, the roomtemperature is lowered to 10°C to avoid the beginning of malolactic fermentation. An aging period on the fine lees follows during 5-6 months with a weekly stirring of the lees. An 8-10-month bottle aging concludes the cycle.

  • 季節性成果 The growing cycle began slightly in advance. We had a very rainy spring and cool temperatures, and well below the seasonal average, in the summer months. This meant that the maturation of the grapes took place with a delay of about 10 days compared to the previous years. The harvest of early varieties was facilitated by a rather cool beginning of September, while late varieties enjoyed a rise in temperatures in the last decade of the month, which allowed for a full ripening of the grapes.
品鉴

Straw yellow color. The perfumes are fresh, with sweet, floral and fruity notes of pear, melon, peach and citrus. In the mouth it has a considerable size well supported by an excellent acidity. The wine is very well balanced with a long finish.

  • 季節性成果 The growing cycle began with a significant delay, with some rains during the Spring. June was marked by cooler temperatures, under the seasonal average. August and September were hot and dry, but the ripening, despite two weeks delay, have been supported by water reserves of the previous months. Summer nights were characterized by cooler temperatures, contributing to the improvement of the quality of the grapes. From the end of September, rainfall was abundant, causing problems during the repining, without affecting the vineyards.

Straw yellow color, very intense bouquet with fruity notes of pear, citrus fruits and slight hints of vanilla and white flowers. Strong structure and great dimension, supported by a vibrating acidity that confers freshness. Well-balanced and persistent finish.

Greenish yellow color. The nose conveys immediately floral hints, well integrated with fruity notes of pear, citrus and vanilla. The structure is strong, smooth and supported by a lively acidity, that gives freshness and persistent, and vanilla which comes back to the retro-olfactory aromas.

  • 季節性成果 The vine’s growth cycle started at the right time with particularly mild and dry weather in April and May. Sunny days in June were then followed by copious rainfall in mid-July, accompanied by a significant drop in temperature. August was fairly cool, but the region was then covered by an anti-cyclone weather pattern originating from Africa, which led to a spike in temperatures, reaching well above the average for the period and lasting for around two weeks, putting the vines under hydric stress and accelerating the ripening. September and October were sunny and dry with very hot temperatures.

Extremely intense color.  Floral and fruit aromas in harmony, with strong notes of pear, citrus and a hint of toasted hazelnut. The structure is substantial and smooth, with a pleasant acidity both up front and lasting well into the finish.

  • 季節性成果 The growing season began with a slight delay, and spring was characterized by a very rainy May and June. The temperatures in June were very cool and well below the seasonal average but from early July the temperatures began to rise and it became hot in the second week of the month. In August temperatures fell again, and the cool nights contributed to the quality of grapes, both in aromatics and maintaining organic acidity. From mid-August through September there was little rainfall, facilitating a smooth harvest.

  • 季節性成果 The spring start to the growing cycle was marked by abundant rainfall, which helped provide high levels of water reserves. The rainy phase went on, unusually, through mid-July, with temperatures particularly cool and well below the seasonal norm. Through the rest of the season, the weather stayed warm and dry; allowing the vines to take advantage of the water reserves accumulated during the spring. Relatively cool nightly temperatures allowed for the development of aromatics and polyphenols, enhancing the overall quality of the fruit. The harvest went smoothly through an extended period thanks to dry, warm and sunny days in September and October.

  • 季節性成果 The winter, with levels of precipitation above the seasonal average and quite mild temperatures, was followed by a very normal spring, in terms of both rainfalls and temperature. The months of May and June were marked by some rain, with pretty cool temperatures through mid July. The hail storm which took place on August 15th struck only part of our vineyards, sparing our best quality grapes and resulting in only a slight decrease in production. Overall, each of the various growing phases of the vineyard took place slightly later than in previous years, including a two-week postponement of harvest to allow for optimal conditions.

Overall summer temperatures were lower than the last ones and most importantly, normal patterns of more than significant variations between daytime and night temperatures returned, yielding for a slow and balanced ripening.

  • 季節性成果 The seasonal conditions were marked by a severe spring frost and by one of the most severe heat waves in European history that greatly anticipated the start of the annual harvest. Fortunately, the heavy rainfall of the previous winter allowed for abundant water reserves in the soil, thus avoiding the risk of hydric stress for the plants. The spring frost, combined with the hot summer, allowed for a rich and concentrated fruit, even if greatly reduced in quantity. Most importantly, normal patterns of significant variations between daytime and night temperatures returned, adding finesse and complexity to this very good vintage. The exceptionally healthy berries of this vintage allow for an optimal quality harvesting.

  • 季節性成果 A warm and dry start to the season yielded to heavy rains in August and September, delaying normal development. Fortunately, the early harvest of the Chardonnay was completed as the rains began to fall, minimizing any negative impact. Generous spacing between rows of vines also played a positive role, allowing for optimal airflow and avoiding risk of mold.

The light straw color hits a big and intriguing variety of aromas most of all fresh flavors of green apple, with hints of dried fruit in perfect harmony with the honey and fresh backed bread notes. The vanilla aromas coming from the French oak integrate and complete the structure of this wine giving a pleasant wooden note.

Subsequently, in mid to late August, unusually high temperature brought on an acceleration of maturation and increased concentration of sugars. To preserve the freshness and fruitiness of the aroma, harvest began early and rapidly. It was one of the most challenging vintages in our estate’s history.

  • 季節性成果 This vintage is most noted for a particularly dry summer. Torrid heat in late July through mid August had great influence on the quality of the grapes, causing a very contained development of the plant and fruit. Small berry size with a higher proportion of solids (skins and seeds) to juice influenced the vinification process as well. Manual harvest, soft pressing and temperature-controlled barrel fermentation allowed us to extract a good bouquet while maintaining excellent structure for this wine.
品鉴

This wine of intense “sunfilled” color tone offers its first impact with light notes of sweetness and vanilla in an elegant manner.  Sensations of ripe fruit follow, well integrated and pleasant.  On the palate, the wine offers a striking fusion of freshness with the weight and fatness of its style.
